Pittsburg, Kansas | Bikman (insulin researcher) says it only takes one challenge to get the pancreas jump started and ready to provide insulin as needed again. A single meal with enough carbs to get it going. He says if you are long term ketogenic and for some reason need to do a glucose tolerance test, eat some carbs the day before so your pancreas will be ready. That is all it takes to overcome the supposed "insulin resistance" from a low carb diet.
The anti meat crowd has to grasp at straws to find anything to discourage eating meat. If a person does not eat meat something has to take its place, and most of the choices left have lots of carbs.
