My grandson says the best recipe for zucchini he knows of, is when Grandma shreds it
into a chocolate cake recipe.  I tend to agree......makes it moist and delicious.

Another recipe I really like is a Greek Briam.  Do a net search, either in the oven or
pan fried, contains thinly sliced potatoes, zucchini, onions, garlic in chopped tomatoes.
Make sure you use Greek olive oil.  These vegetables are all in season right now.
