Subject: Pork Braised with Sugar and Pan Fried Roast Pork

Today's lunch/dinner is roast beef and potato. But I am not big fan of beef so I made a dish called Humba or Pork Braised with Sugar and Pan friend roast pork. I grow up eating fresh seafoods and pork but eat beef rarely. My husband and his Dad love beef.

 Pork Braised with Sugar Recip

1 tablespoon minced garlic                     1/2 cup vinegar

 2 tablespoon vegetable oil                    2 tablespoon brown sugar

 1 pound pork shank,cut into  2 inches cubes

 1 cup water                                          1/2 teaspoon oregano

 2 tablespoon soysauce                       1 or two bay leaf

 1 heaping tablespoon of salted blacked beans(optional) this is sold only in oriental food store

 

Picture number 2 is Pan Fried Roast Pork

 2 to 3 pound pork belly or shoulder with skin

 4 cups water

 2 tablespoon salt

 1 cup cooking oil

 Boil pork in water until skin is tender. Remove from heat and drain. Cool and air dry. Deep fry in oil until tiny blister appear on the skin. Chop into serving pieces. You can dip it in vinegar with salt and crush garlic or you can eat it way as you want.
