Don't forget there is also a start compensation. It's usually set at 2% as a default. So, you are giving up some inches at the very beginning. Then you are only gaining 3.6" of cover for every 100' of pipe. Probably starting out at 36" after the plow gets locked on to the .1% after the 2% start compensation. How many feet does it take before you get to the 48" target depth?
