Good question because I had to go back to the invoice to check. It says "Carcass Wt" so I assume that is the weight when it was hung to age so I probably lost a little off of that.
This is the first time we've used this locker for this purpose. We've purchased a fair amount of individual items from them and been extremely impressed with the quality of the meat. If it costs me a little extra to have top notch beef I'll gladly pay for it. |
