Ross County, Ohio | It's all in the hang time. Mine hangs for 14 days. That get all the nasty junk drained out. The corporate processors kill it, skin it and flash freeze it in about an hour. Nothing gets drained out. I've sold beef off my farm to people, that never had local farm raised beef, and they can't believe the difference. I always warn them; when you thaw out that first steak, remember it's not that meat from the store. Season lightly, because it can stand on it's own." One coworker of mine bought a half. She came in to work the following Monday and looked at me and started tearing up. She said,"I thawed out a couple porterhouse for my boyfriend and I. I seasoned it like always and let it sit in the fridge for a few hours like always. I-I ruined those two steaks. I basically brined them and they were terrible.we couldn't do it. the dog wouldn't eat them. I got out two more and lightly seasoned and went straight to the grill. Best steak I've ever eaten." I felt bad for her, because she was tearing up over ruining steaks. | |
