I don't count anything. I do eat the fat that comes with meat. We normally don't add extra fat but if it happens to be a really lean cut might add some butter.

But we do get a significant amount of fat via the low carb desserts my wife makes. Use quite a bit of heavy cream, cream cheese and butter in a half dozen different desserts she rotates. Have one almost every night. Eat quite a few pork rinds also.

So I think we overall get a pretty decent amount of fat.

Kind of same here for chicken. I would guess in the past chicken probably made up half of our meat consumption. Now I bet it is not one tenth or maybe even one twentieth of our meat consumption. Mostly beef and pork.
