Depends how it's packaged (vacuum sealed or just in those white/red bags) and if you have a standard freezer or frost free. It doesn't last as long in a frost free. I butcher a beef once a year for myself and the burger I have left from the previous year is still good but probably not too much longer than that. I'm sure the worst that would happen is an off taste due to freezer burn or a bit dried out. Can't believe anything about it would be unsafe to eat
