Pretty much spot on, although as long as the carbs are kept low enough (under 20 grams a day total for diabetics, under 50 for more metabolically healthy people) and the carbs only eaten a couple times a day most people will do fine. That lets insulin lower enough so over time the insulin resistance will be greatly better.
But if a person has other health issues, I have witnessed a lot of people benefitting from a totally carnivore diet or almost carnivore. Wife and I have transitioned to about 95% carnivore although we are taking more cruises and traveling more and our diet suffers somewhat while traveling. Probably more like 85 or 90% carnivore. We started out eating lots of low carb vegetables and just found over time we kind of lost our desire for them and for my wife the less she eats veggies the better she feels. That may not be the case for many people but for some it is. |
