Those would be the main three. Sugar would include many things like fruit juice and soda sweetened with high fructose corn syrup.
When my wife and I started what we did was just looked at what we had been eating, then ask the question. How many carbs in this particular food? Then did a search something like "how many carbs in sweet corn" and several things would pop up telling us how many carbs were in a serving of that food. We set a limit of maximum 20 grams of carbs a day. And went from there. After a while we just automatically knew which foods we had to avoid all together, which foods we had to watch our portion size very closely or just not eat it, and which foods we could basically have all we wanted.
There are other nuances but that is basically what we did. The green above ground vegetables you can almost have all you want. While they do have a few carbs by the time it takes up energy to actually digest them they are almost free carb wise. Things like broccoli, Brussel sprouts, etc. We did a lot of stir fry in the beginning with a lot of green vegetables.
