 West Central IL | If you don't want to stay up until midnight to put it in, you can put it in earlier. if it happens to get done too soon you can wrap it and then put it in a cooler with towels around it up to 5 hours before pulling. I've even read where some guys will smoke the thing to 205, then wrap it tight and put it in the oven on a out 170 for something like 24 hours before serving. | |
