Don’t know what you’re doing with your country style ribs, the 3-2-1 method works good for spare ribs.

I like to cook the ribs at 200 on the smoker with a decent rub, preferably slightly sweet. The pellet grill I use puts out a lot of smoke at that temp.

2 hours wrapped in aluminum foil or butcher paper with some moisture added, apple juice, beer or just water.

1 hour to dehydrate slightly and serve. My grandkids send me notes asking for more bbq so the method must be a hit.

My goal is to serve ribs that dont need sauce added.
