36" bucket on a 200 class excavator would be around 1.25 CYD. Probably fair in the right material to think you'd get 1.5 CYD heaped.

I would run up to a 2.0 CYD on a heavy spec 200 class machine, maybe pushing 2.25 CYD heaped if you keep it in close with no thumb and that would be about the biggest OEM bucket option. Larger than that and you'd almost have to be into a custom built bucket which is always an option.

Most MFG's in the spec books will have a bucket matching chart to answer this question. Or look at the lift charts for you machine setup and figure bucket + load weight around 75% of the lift chart weights in the working range you'd be able to maintain.
