A great steak is awesome...........but I can live on hamburger.
We'll take a lame cow once in a while and have her made completely into hamburger. It's kind of a win win..........since they would've discounted her at the sale barn anyway, and grinding every cut into the meat makes for better burger in my opinion. Most of time we're sitting on 500+ one pound packages of ground beef. We'd be lost without it.
I did talk to a neighbor a week ago though who had hauled three old lame cows off.........and got a check in the mail for $6700. He said he probably couldn't afford to butcher his own anymore.........haha!
