Pork burgers from an old sow that went down are better than pork burgers from a butcher hog. The ones from a sow have more fat content thus more flavor. The ground pork from a butcher hog is pretty bland because most of them are so lean now. Of course you can doctor it up to add some flavor but I prefer ones with a little natural flavor.
