We have been trending towards more chicken and pork for the last few years just because of changing tastes and eating habits. I still enjoy beef and we do have it occasionally but not nearly as much as we did ten years ago. Getting a quarter or half locker beef from a neighbor is more economical than buying by the cut at the meat counter but it is still kind of spendy right now for consumers. It has been just the two of us for some time now and we don't consume enough for it to be practical to get a quarter or half beef anymore. For us it isn't really about dollars and cents it is just a change in our habits. I expect there are plenty of young families out there that are trying to figure out how to justify buying beef over pork and chicken right now. I would think ground beef will still move pretty well at higher prices but the choice cuts are going to be a really hard sell.
