Yeah cattle definitely don't have "flotation tires" when it comes to the hooves. More like a semi tire in a wet field and ruts all to heck. 3/4 ply would easily support a person if it had enough support around the edges for a small area, but something that weighs 1500-2000 lbs. with only 4 hooves puts a lot of weight on a small area.
That rating for the plywood is probably factoring in a 16-24" spacing on joists or rafters, so anything further apart than that will reduce what it can carry.
