I avoid all extracted phytosterols (plant fats/oils) as they don't set well with me.

Ever since I quit consuming them, I don't sunburn anymore. And that seems to be a fairly common observation from people when quitting seed oils.

What does it mean? Seed oils lower LDL which is necessary for your body to produce/mobilize vitamin D. So instead of your body turning the sun's energy into Vitamin D, the skin just burns as there is nowhere for the energy to go. Or so I understand it in farmer speak.

Phytosterol consumption WILL directly reduce LDL levels. If you believe that to be a good thing, then there it is. I personally do not want anything that I eat to directly reduce LDL levels.

But I will add that there is no known metabolic pathway by which dietary animal fats can directly increase LDL - IE eating saturated animal fat DOES NOT directly increase LDL.

Also, Coconut oil high in saturated fat will still lower LDL.

Animal fat lower in saturated fat and higher in unsaturated fat (fish oil, chicken) does not have a direct effect on LDL.

It's the phytosterol vs cholesterol that seems to matter from what I can find.

And then there is the oxidation aspect. Beef tallow seems to be quite stable. Seed oils, not so much.
