Burgoo in my area is made from barbequed meat with cook's choice of vegetables cooked to a a thick rich stew. Many of us grind the hard trim and bark from barbequed pork butts. Good burgoo is heavy on the meat and light on vegetables, I use black eyed peas and lima beans along with a generous dose of barbeque sauce. Family thinks it is really good. I have a daughter that for medical reasons can't eat meat. She wanted me to come up with a vegetarian version. I substituted mashed chili beans for the pork and she thinks its good. She now uses that recipe to make it for herself.
