My wife just eats it with ranch salad dressing, or puts some in a mixed salad. Broccoli slaw is a way for the broccoli processors to use the broccoli stem that they can't sell.
They peel the stems and shred the tender inner part and there you have "broccoli slaw."
You can peel the stems and cook them too, but it is a lot of work for not much broccoli.
