Because most people couldn't stop from over cooking pork if their life depended on it. Then they complain about how "dry, tough and tasteless" pork is. Me, "No it's not, you just don't know how to prepare food."
What's worse is that many professional cooks/chefs aren't any better about overcooking pork or putting some God awful sauce on top of it.
