Smoked a 6.5 lb pork but for the first time, 210 degrees but after 5 hours it stalled out at 146 degrees, turned the heat up to 260 and then to 300 for the last hour, temp only got to 164 degrees it was on for 10 hrs. It was good and tender but all the videos I watched said you should get the temp to 190-200 degrees. Any ideas?
