I have let it stand for 2 months after it was ready. (Terrace channels). And it was fine. Lost a little test weight.
I have also had it sprout in the head within 2 weeks of being ready to harvest.
All depends on how wet it stays. I believe if it stays wet for 36 hours it will sprout. Get a few hours to dry every afternoon and it can last quite awhile.
This is for Hard Red Winter Wheat. Hard Red White Wheat sprout in less time or less moisture.
