SEIL | Ribs are not to fall off of bone is correct according to our friends who travel the states judging BBQ. I ask them, told them how I cook mine, and they said that is how they should be. I was surprised. I only cook baby backs, cook them over charcoal with a tin of water beneath them. Usually cook, depending on the meatiness of them, for 30 minutes, turn them 30 minutes more, turn them and cook longer if needed. I hold them up with tongs from one end and see if they bend easily. If so, I deem them done! Not very scientific, works for me. | |
