We've been making our own sausage patties for a couple years. I have been buying pork shoulders when they're on sale, usually 99 cents/lb. So far we've been using seasoning packets from Fleet Farm(I believe LEM brand). I weigh out 4 oz, make patties with a patty press, then freeze on a cookie sheet. Next day when they've hardened I vacuum seal them.

Easy, cheap, good. I'm gonna keep doing it. Next time I want to try my own spice blend, the prepackaged stuff is pretty pricey for what it is.

Edit-these are a couple recipes I saw on the net and saved. I have NOT tried either of them...just posting them as food for thought, or some ideas where to start. Personally I'd shy away from the cayenne pepper.
