Editing the variety name in Products tool doesn't cascade that change to the work data. Simplest way to do what you want to do is to use Work Analyzer. From there you can make edits to a variety. Filter to the variety you want to change, then do the edit.
That’s what I’m doing(work analyzer). When you filter to a single variety and click the edit button, you have to edit field by field.
