I agree with you, but that “if,” looms large. Hearing what ditt is saying about his meat sales tells me the tide is turning. Our freezer beef customers aren’t wanting to commit after bumping prices. How much will the consumer pay for the primal cuts? Hamburger is here to stay, but I don’t see the packers grinding 100% of a 1600lb choice steer.
