Speaking of burgers.
A friend and I were talking about how years (probably about 70) we enjoyed the hamburgers at a place where they had a big flat grill. The hamburgers were flattened on the grill and all that was put on them was salt and dill pickles.
They were a treat to me. At home we had farm raised and processed hamburger that was about 3/4" thick on home made bread. The pickles were never dill but always sweet that mom made, no mustard but we did have ketchup.
It's funny how what the healthiest and best didn't taste as good as those we got in that shop.
The same with pancakes,
"Smash burgers" are all the rage in our neck of the woods. Throw a ball of hamburger on the griddle, then smash it thin with a big flat spatula and cook till the edges are crispy.
