SESD | The coverage logging is a box that needs to be checked in the steering adjustment wrench you can see on the run screen. If you have a line loaded and have the autosteer tab visible click the wrench in the lower left corner. Then select the "steering" tab across the top (I'm pretty sure its steering, it's one of them anyway), should be a box to check on the bottom of that page that says "log coverage while autosteer is engaged" or similar to that.
For the offset in about any configuration, tillage, application or planting you can offset the implement left or right, but not while making the configuration. Once the configuration is made you need to get to the configuration setup for your tractor and slinger. You can get there from the main wrench, highlight your config then click the wrench in the middle of the screen. It will open the Config Setup screen. In the bottom middle should be an offset button, clicking that will bring up Implement offsets. There will likely be two tabs at the top of the screen, one is Implement which is where you'd see hitch to axle distance. The second tab would be liquid or tillage or whatever you chose while creating the config. Select that tab. The lower half of the screen is where you set the left/right offset. I've made one like this for a pull type forage harvester and it worked by showing the application point to the right of the icon on the run screen.
