Subject: New Recipe from amsunshine - Roasted Loaded Mexican Potatoes



Blooming where I am planted!

Tried this out on KSBoy and he really liked them.  Please let me know if you like them too!

Roasted Loaded Mexican Potatoes

5-6 potatoes, cut in 1" cubes (leave skins on)

olive oil

1 packet Lipton Onion Soup mix

1-2 T taco seasoning (you can buy this in the packet or make your own)

green onions, chopped

sour cream

shredded cheddar cheese

Optional:

fresh pico de gallo

cooked and drained ground beef, sauteed in taco seasoning after draining

Roll cut potatoes in olive oil and soup mix.  Place in single layer on pan and roast at 425 degrees about 20-30 min.  Top with shredded cheese and melt in oven.  Take out and put on plate.  Top with taco seasoning, sour cream, and onions.  If desired, top with pico de gallo and ground beef.  Enjoy!
