| I never thought I liked sirloin much. We used to always have full freezers of limp animals off the yard. Times weren't great but we were fed. Then times got a little better, and we had less on feed. We got to the point where downers weren't keeping up with what we were eating. So one day Dad goes out and picks the best steer on the farm. We sold a lot on the grid so it would have been prime for sure. Now that kind of sirloin is truly enjoyable. I'd still take a nice ribeye over a nice sirloin, but a really good sirloin is fine by me. I'll take a burger over low grade though. | |
