Mount Vernon, WA | Unplug the sensor and see if you get a code for "coolant temp sensor voltage high" or wording similar to that. If you do, then I suspect you have excessive resistance in the sensor wiring causing an abnormally high signal voltage and hence the low temp reading.
Since you edited your original post, I will add to mine. Did you try what I suggested? Unplugging the sensor and checking for a code will help verify the integrity of the wiring. More questions for you: Do you have any current codes associated with this? During the 5% of the time that the temp reading drops below zero, does it happen immediately or does it gradually go down?
