Fairfield County, Ohio, USA | VNC "virtual network computing" (but nobody knows those words, they only know the abbreviation) is one type of software that would likely help here. You'd set up your computer in the scale house as a "VNC server" (which just means running another app on it) and then set up your tablet or outside computer as a "VNC client" (which just means running an app on it). The result is that the screen on the computer outside will show you the screen from the computer inside, and will let you interact with it just like you were at that (inside) computer. You would have to have a network connection between the two computers -- ethernet or wifi.
TightVNC https://www.tightvnc.com/ is one of the apps that I've used to do VNC in the past. It's free. I haven't used it for a number of years now, but I imagine it hasn't changed much.
