I wonder how much of the benefit from a keto diet comes from the keto diet and how much comes from getting rid of all the processed junk in our "food".
I came into the keto/carnivore scene from a completely different angle than most. I was having health problems and decided to go on a strict elimination diet of nothing but beef, salt, and water to see if I could identify any trigger "foods". And have I ever.
I've been pretty much carnivore for the past 6 months (maybe "ketovore"). Not because I really care about insulin levels. Or carbohydrate content. Or calories. Or anything other than being able to properly breathe and not have joint pain.
But to avoid all of my trigger ingredients (all man made that I have identified so far) I have drifted to whole food that I can produce myself. There is very little that I can buy in the store besides a couple quality dairy products.
