Pittsburg, Kansas | Lots of temptations, that is for sure.
We relax it somewhat but are able to stay pretty good.
Daily supper one of the regular options is an 8 ounce ribeye steak. I have learned I can order two steaks with no potatoes and the mixed vegetables that come with it are pretty low carb. So I do pretty well. They have a cheese plate dessert option.
Lunch I can do a double cheeseburger without bun and no fries. Breakfast is great with all the omelets, eggs, sausage and bacon I can eat.
But we do splurge occasionally. I had a brownie with vanilla ice cream today at lunch which is definitely not low carb. To keep my blood sugar within acceptable range I go for a 20-30 minute walk immediately after such an dietary excursion. I guess if I was Catholic I would call it purgatory for my dietary sins.
We are trying to stay 80-90% on the diet while still enjoying some of the provided treats to make it more of a vacation than our usual lifestyle. The key for me since I no longer take any diabetic medication or insulin is to make sure I get enough exercise to keep my blood sugar in check. And I check it often. Much more often than at home. Don't want to be lopping of body parts like other diabetics I know.
