Yes, kernels pollinated by field corn are starchier. Across the road will probably be less than 10% of kernels so not terrible if it does.
If you time planting right you can pollinate it out of sync with the field corn. 75 day sweet corn next to 110 day field corn works out fine for me if planted the same day. 90 day sweet corn planted a week later works too.
