Have your butcher cut the chuck steaks out. It's a muscle in the chuck that will rival any steak, some butchers don't know about it. Here's betting if the guys cutting get told burger on everything but the loins, that the chuck steaks go with them. I'd have to save a few chuck roasts out too, but that's just me
