Where I am I strongly doubt they would reliably make seed after a small grain came off. Small grains here usually come off late July or early August, not enough time for sunflowers to do much.

Only ones I have grown in the garden the larger headed ones like confectionary seemed to develop some sort of head rot. Smaller oilseed ones might be ok.
