What each does in the soil and how it affects PH and sulfur sources is what matters. All forms of N convert similarly in the end and are equally available to the plant. NH3 is the most stable because it takes longer to convert. The drawback is slower early growth, negative effects on PH and biological destruction in the top 8 inches of soil and the grow back for fungi and bio beneficials is slow. UAN is the least stable but can be stabilized on the surface with a stabilizer and has little to no effect on soil biology because it's at the surface which makes it susceptible to runoff unless incorporated. The same is true with Urea. UAN has a huge advantage in no till as it breaks down soybean straw and releases those nutrients for late season N,P, K,S which is likely a result of increased bio activity. All sources of N are significantly better when paired with adequate sulfur as the sulfur helps the plant utilize nitrogen better. ATS is a better spring source than AMS with AMS better in season. NH3 is the best fall source, Urea the best early spring source and UAN the best pre emergence source. There is no right or wrong as all work best in a specific system.
