Galahad, Alberta | If you can get the falling number test for your wheat that you intend to grind, look for at least 350. The number is an indication of the elasticity of the flour. A high number will give a nice, well raised loaf with no air pockets. The lower the number, the more likely the loaf will be lopsided or have air pockets in it, and be stiff. A FN of 250 is poor. I should add, this number is for HRS. I can’t speak for good winter wheat numbers. Our buyers (commercial grain out of the bin) are becoming more picky and using a poor falling number as a discount factor.
