I think the basic gist is the folded eggs come from powder.
Kind of difficult to make a sunny side up egg out of powder.



I had to think on that for a while before coming to the same conclusion you did.

I recall an episode of Mash where they complained about the food so they let the complainers prepare the food. I think it was Charles that described some wonderful egg creation, boiled and jazzed up to make. And the cook opened and dumped in a 25 lb sack of powered egg. It was funny.

Food costs really have skyrocketed, and seems the trend continues.

Egg production seems to be a closed loop so intigrated I don’t suppose there is a wholesale egg price. Who is making the money on the limited egg supply available, are growers getting any more now than a couple years ago, or are contracts just per space or bird or what?
