For 30 years, with kiddos running around, every Monday my wife has roasted two chickens for supper. I cut them up and separate the meat from the bones. The carcass went into a stew pot to be skimmed for more meat, and to make broth. Then one or two other nights of the week, she would make chicken soup, or chicken and dumplings, enchiladas, etc, etc. She never cooked a single beef or pork roast, it was always at least two of them.
You didn't make a little pot of anything. Green beans and the like were cooked in a big pot to intentionally have enough for other meals. Bread or biscuit recipes were always tripled for extras for the week.
We could not have afforded to feed our family without leftovers. Just the time savings is huge.
I had an aunt and uncle that never had children. She wouldn't eat leftovers. She would show up at family dinners with a little bitty sauce pan of a side dish. We would all chuckle as there would only be three green beans apiece to go around.
Now we are down to just two daughters at home, and one is leaving next fall for college. One of the most endearing things I see in my wife right now is her continuing the above food prep habits for just four of us. It's hard for anyone to give up their life's work when it was done for so many years out of love.
I take her out for a quck weekday date night a lot more often now to give her a break. She always takes any leftovers home for tomorrow's lunch.
