What are the major differences between the letter models besides year of manufacture? Are any to be avoided? Mainly pulling 12/13 row planter and bigger manure spreader at this time.

There were some non S marked tractors that had the Data5 display in late 2018, early 2019 I believe. I had 3 of them that were ordered as Data4 tractors and were built as the newer models.
I'm going to say that there are no Challenger TMC tractors to speak of, since I can't find any available for sale on TractorHouse today.
