I’ve done a lot of what you are going.

I usually throw annual rye grass for erosion control. If you have any clover, white or red. Just some of that. I usually have a small amount of orchard, brome or priories grass on hand and sprinkle some in. But that will take a while to show up.

I do most by hand like you. I do have a Bandit 200XP chipper that I’ll chip the trees up. Fill cuts and make dams with for erosion.
