I would try a fish seasoning or better yet a blackened fish seasoning.

A local SWFL fishing family we have become friends over the years throws alligator on a pellet grill, seasons with their favorite seasoning and grills until done.

Our SWFL fishing friends use a pellet grill temp of about 275*F-300*F until the tail is done to about 155*F-165*F...I've had under cooked alligator in the past so I would lean towards 165.

Our son in law had a small alligator shipped to MN for his bachelor party back in the day. He did what our SWFL friends told us to do, and his grilled gator turned out surprisingly good IMO.
