 East of Broken Bow | The McRib is basically the little bits of meat left over on the pork bellies after the 'good' bacon is cut. Technically, it comes from the rib meat, at least mostly-ish - enough so that they can put 'rib' in the name. However, if they called it the leftover bits and trimmings ground up and pressed into a rib shaped patty less people would order it than when they call it the 'McRib'.
If I remember right, it was kind of like Buffalo Wings. There were these little chicken wing bits that were all but worthless because there were way more of them than the demand to the point people were looking for ways to utilize them, and someone came up with the idea of making them an appetizer in Buffalo Sauce, and suddenly they found a way to utilize the bits and pieces that otherwise no one wanted. The McRib was pretty much the same thing with the little bits and trimmings off a hog that no one wanted for anything else.
Also, I am with the other posters as to wondering why so much sauce, but maybe it is to better disguise exactly what the patty looks like, LOL. | |
