You may have been drinking high protein low-fat milk like they sometimes sell today. It usually costs extra to create the high protein part of that product by adding in milk powder, so it’s a rarity these days. I grew up drinking what was probably 2.5-ish% Jersey milk. My mother always poured off a pint of the cream that rose to the top of the glass gallon jug after it sat overnight in the refrigerator. The milk was high protein stuff though!

Cream was accumulated until the little 1950’s frig was crowded and then she would have a defrost and clean the frig morning and churn all the cream and wash the jars to start the process over.

Fair-life brand milk is ultra filtered to remove a lot of the lactose and concentrates the protein some. It’s a good product in my experience. I don’t think I’ve ever had any of their low fat milk though. Not a fan of 2% or heaven forbid, skim milk!
