If they have a blush to them they should be able to ripen. Otherwise they won't and probably find a use for them like fried green tomatoes. This year wasn't a good year for tomatoes here, did pick some green but just kind of threw the hands in the air with most and left them go. Was during crop harvest here or I'd have tried to gather more of them.
