S Illinois | The market will saturate quickly. Like each value added market up the chain, there is limited consumer demand at each level. Not everyone will shop at Whole Foods and pay those type prices. Much like non-GMO, white corn, organic, the profits ebb and flow based upon player who enter and leave the industry.
There is still profit in the wholesale. But we as an industry have decided that our biggest expense-land is better to be controlled than controlled profitably. So anyone not making money has only themselves to blame. And if one can’t make money while still farming, that is the market telling you it doesn’t need you.
