I've heard of "Fried Green Tomatoes". In fact, I think there was a movie with that name.

I've tried to keep green tomatoes from late in the season one year. I was not impressed. In fact, I think I ended up tossing them.

This year my late green tomatoes went in the compost bin.

If you go to a recipe website - e.g. cooks.com, or others - and do a search for "green tomatoes", you will find recipes for: Fried Green Tomatoes... Green Tomato Relish.... etc   If you wish to harvest green tomatoes, that is what I suggest... go to a recipe website, do a search, get some ideas.   See what seems interesting to you.
